Buffalo Chicken Salad
3 Boneless skinless chicken breasts (rinsed and tenderized)
1 bottle Heritage Fare Buffalo Style Wing Sauce
1 16oz. Low fat cottage cheese (small curd)
1 packet ranch dressing mix
Your favorite Salad ingredients
(I kept mine simple with what I had on hand. Romain lettuce,tomatoes,green onions,carrots,mozzarella cheese, and cucumbers)
I used the grill for my chicken but I think it would be great cooked in a skillet too.
Use a small amount of wing sauce to cover the chicken breasts and let them marinate in it for about 30 minutes. Prepare your salad and refrigerate. For the dressing I love to use ranch with my wings but of course it isn't all that healthy either so here is my version.
In a blender or food processor add the cottage cheese and ranch mix. Add about 3 tbs. water and blend until smooth and creamy. Keep refrigerated.
Grill your chicken and then slice it into strips. Toss it in more of the wing sauce and plate it up.
This is so gooooood!
Note: The wing sauce is a bit hot so the more you add the hotter it will be.
I love buffalo wings too - there's a Rachel Ray recipe kicking around for buffalo chicken meatballs that is really good. And I'm a sucker for homemade buffalo chicken pizza. Your salad looks delicious - I'll have to give it a try soon!
